Avocado Corn Salsa is a vibrant and refreshing dish that captures the essence of summer in every bite. Perfect for gatherings, this salsa combines the creaminess of fresh avocados with the sweetness of corn, offering a delightful contrast in flavors and textures.
Ingredients
Scale:
2 ripe avocados, diced
1 cup sweet corn (fresh, frozen, or canned)
1 small red onion, finely chopped
1 medium tomato, diced
1/4 cup fresh cilantro, chopped
1 lime, juiced
1 jalapeño, seeds removed and finely chopped (optional)
Salt and pepper, to taste
1/2 teaspoon garlic powder (optional)
Instructions
Start by dicing the avocados, chopping the onion, and dicing the tomato. If using fresh corn, cook it for about 3-4 minutes in boiling water until tender, then drain and cool.
In a large mixing bowl, combine the diced avocados, corn, chopped onion, diced tomato, and cilantro.
Squeeze the lime juice over the mixture and stir gently to coat everything without mashing the avocados.
If you enjoy a bit of heat, add the finely chopped jalapeño to the bowl. Season with salt, pepper, and garlic powder, if using.
Using a spatula or spoon, gently mix all the ingredients together, being careful not to mash the avocados too much.
Taste your salsa and adjust the seasoning, adding more lime juice, salt, or spice as needed.
For best flavor, let the salsa sit in the fridge for at least 30 minutes before serving.
