This delightful dish is a fusion of classic breakfast staples, presenting crispy bacon, fluffy scrambled eggs, and melted cheese all enveloped in a flaky biscuit.

2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
1/2 cup unsalted butter, cold and cubed
3/4 cup buttermilk
8 slices crispy bacon, cooked and crumbled
4 large eggs
1/2 cup shredded cheese (cheddar or your choice)
1 tablespoon milk
Salt and pepper, to taste
1 tablespoon olive oil or butter
Instructions
Preheat your oven to 425°F (220°C).
In a large mixing bowl, combine the flour, baking powder, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
Pour in the buttermilk and stir until just combined.
Turn the dough out onto a floured surface and gently knead it a few times. Roll it out to about 1-inch thickness and cut out rounds.
In a skillet over medium heat, add a little olive oil or butter. Scramble the eggs with milk, salt, and pepper until just set. Stir in the crumbled bacon and half of the cheese.
Place half of the biscuit rounds in the skillet. Spoon the bacon and egg mixture over them and top with the remaining cheese. Cover with the other half of the biscuit rounds.
Bake in the preheated oven for 15–20 minutes or until the biscuits are golden brown and cooked through.
