Ingredients
Scale:
2 lbs beef chuck, cut into 1.5-inch cubes
1 medium onion, chopped
4 cloves garlic, minced
2 medium carrots, sliced
2 medium potatoes, cubed
1 bell pepper (red or green), sliced
1 cup green peas (fresh or frozen)
1 can (8 oz) tomato sauce
1 cup beef broth
1 cup water
1/2 cup red wine (optional)
2 tablespoons soy sauce
1 tablespoon fish sauce
1 teaspoon salt
1 teaspoon black pepper
1 bay leaf
1 teaspoon paprika
2 tablespoons cooking oil
Chopped parsley or green onions (optional)
Instructions
In a large bowl, marinate the beef chunks in soy sauce and black pepper for at least 30 minutes to enhance the flavor. For better results, marinate overnight in the refrigerator to allow flavors to penetrate deeply.
Heat cooking oil in a heavy-bottomed pot over medium heat. Add chopped onions and minced garlic; sauté until the onions are translucent and fragrant, about 3-4 minutes.
Increase heat to medium-high and add the marinated beef. Cook until browned on all sides, approximately 5-7 minutes.
Pour in the tomato sauce, beef broth, and water. If using, add red wine for a richer taste. Stir to combine.
Add fish sauce, salt, bay leaf, and paprika. Bring the mixture to a boil, then reduce heat to low. Cover and let it simmer for about 1.5 to 2 hours, or until the beef is tender. Stir occasionally.
Once the beef is tender, add the carrots, potatoes, and bell pepper. Continue to simmer for an additional 20-30 minutes until the vegetables are cooked through.
Stir in the green peas and adjust the seasoning if necessary. Remove the bay leaf before serving.
Ladle the Beef Caldereta into bowls, and garnish with chopped parsley or green onions, if desired.
