4 large flour tortillas (10-inch)
2 corn tortillas
6 large eggs
2 tablespoons milk (optional)
1 cup cooked and crumbled chorizo, or 1 cup diced cooked bacon, or 1 cup diced cooked sausage
1 cup diced bell peppers (red, green, or yellow)
½ cup diced onions (yellow or white, or red)
½ cup diced tomatoes
1 jalapeño, finely chopped
1 cup shredded cheddar cheese or pepper jack cheese
Sour cream
Guacamole
Fresh cilantro, chopped
Hot sauce or salsa
Instructions
Gather all your ingredients before starting to cook.
In a skillet over medium heat, add a splash of oil to prevent sticking. Sauté the diced onions and bell peppers until softened and fragrant, about 3-4 minutes. Add the jalapeño and diced tomatoes, cooking for an additional 1-2 minutes.
