Ingredients
Scale:
4 boneless, skinless chicken breasts (about 6 oz each)
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon olive oil
1 cup fresh broccoli florets, chopped
1 cup shredded cheddar cheese
1/2 cup cream cheese, softened
1/4 cup breadcrumbs
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon red pepper flakes (optional)
Instructions
Preheat your oven to 375°F (190°C).
In a bowl, combine the chopped broccoli, cheddar cheese, cream cheese, breadcrumbs, garlic powder, onion powder, and red pepper flakes. Mix thoroughly.
Take the chicken breasts and make a pocket in each by slicing them horizontally.
Generously fill each chicken breast pocket with the broccoli cheese mixture.
Season the outside of the chicken breasts with salt and pepper. In a large oven-safe skillet, heat olive oil and sear each chicken breast for 3-4 minutes on each side.
Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the internal temperature of the chicken reaches 165°F (75°C).
Once cooked, remove the skillet from the oven and let the chicken rest for 5 minutes before serving.
