Burrata bruschetta is a delightful twist on the classic Italian appetizer, combining the creaminess of fresh burrata cheese with the vibrant flavors of blistered tomatoes and fresh herbs.

1 French baguette (or ciabatta), sliced into 1/2-inch thick pieces
2 tablespoons olive oil, plus more for drizzling
1 clove garlic, peeled
4 ounces fresh burrata cheese, preferably at room temperature
1 cup cherry tomatoes, halved
Salt and pepper, to taste
1 tablespoon balsamic vinegar (optional)
Fresh basil leaves, for garnish
Instructions
Preheat your oven to 400°F (200°C). In a mixing bowl, toss the halved cherry tomatoes with olive oil, salt, and pepper until they're well coated. Spread them out on a baking sheet lined with parchment paper.
Roast the tomatoes in the preheated oven for 15-20 minutes, or until they start to blister and caramelize. Remove from the oven and set aside to cool slightly.
Arrange the sliced baguette on a separate baking sheet. Brush each slice lightly with olive oil and toast in the oven for about 5-7 minutes, or until golden brown.
Once toasted, rub each piece of bread with the peeled garlic clove.
On each slice of garlic-r믭 toast, layer the blistered tomatoes generously. Tear the burrata cheese into pieces and place it atop the tomatoes.
Drizzle with balsamic vinegar if desired, and sprinkle fresh basil leaves over the top.
