  1. In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente, usually about 8-10 minutes. Reserve 1/2 cup of the pasta water and then drain the rest.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the shrimp and season with 1 tablespoon of Cajun seasoning. Cook until the shrimp turn pink and opaque, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside.
  3. In the same skillet, add the diced onion and sauté for about 2-3 minutes until translucent. Add the minced garlic and cook for an additional minute until fragrant.
  4. Incorporate the sliced bell peppers and halved cherry tomatoes into the skillet. Sauté for another 4-5 minutes, stirring occasionally, until the vegetables are tender.
  5. Pour in the heavy cream and chicken broth. Add the remaining Cajun seasoning, and stir well to combine. Bring the mixture to a simmer, cooking for about 3-4 minutes, until it thickens slightly.
  6. Add the cooked pasta and shrimp back into the skillet. Toss everything together, adding reserved pasta water as needed to achieve your desired sauce consistency. Season with salt and pepper to taste.
  7. Remove from heat and garnish with fresh parsley. Serve immediately while hot.
