4 large yellow onions, thinly sliced
2 tablespoons unsalted butter or olive oil (or a combination of both)
1 teaspoon salt
1 tablespoon sugar (optional)
1 tablespoon balsamic vinegar (optional)
Instructions
Peel and slice the onions into thin, even slices.
In a large, heavy-bottomed skillet, heat the butter or olive oil over medium heat until melted.
Add the sliced onions to the skillet, stirring to coat them in the fat.
Sprinkle the salt over the onions and stir well.
Reduce the heat to medium-low and cook the onions, stirring occasionally, for about 30 to 40 minutes.
After about 30 minutes, check for color; add a splash of water or broth to deglaze the pan if necessary.
If desired, stir in the sugar and balsamic vinegar during the last 5 minutes of cooking.
Cook until the onions are deeply caramelized and have a jam-like consistency.
