2 cups mixed vegetables (e.g., broccoli, bell peppers, carrots)
3 cloves garlic, minced
1 inch ginger, minced or grated
3 tablespoons soy sauce (or tamari for gluten-free)
1 tablespoon oyster sauce (optional)
1 tablespoon cornstarch
1 tablespoon honey or maple syrup
1 tablespoon water
1 tablespoon sesame seeds (for garnishing)
2 green onions, chopped (for garnishing)
Instructions
Slice the chicken breast into thin strips for even cooking.
In a small bowl, whisk together the soy sauce, oyster sauce (if using), cornstarch, honey, and water until smooth.
Heat a wok or large skillet over high heat, then add the vegetable oil.
Add the sliced chicken to the hot wok and stir-fry for about 5-7 minutes until cooked through.
Add the minced garlic and ginger and stir-fry for an additional 1-2 minutes until fragrant.
Toss in the mixed vegetables and stir-fry for another 3-5 minutes until bright and tender-crisp.
Pour the sauce over the chicken and vegetables and stir well to coat evenly. Cook for an additional 1-2 minutes until thickened.
Remove from heat and garnish with sesame seeds and chopped green onions. Serve immediately.
