Chicken Taquitos, also known as rolled tacos, are a delightful staple of Mexican street food that combines crispy tortillas with a savory filling.
Ingredients

2 cups shredded cooked chicken
1 cup shredded cheese (cheddar or Mexican blend)
1 teaspoon taco seasoning, or to taste
12 small corn or flour tortillas
Cooking oil (for frying or baking)
Guacamole
Sour cream
Pico de gallo
Sliced jalapeños
Chopped fresh cilantro
Instructions
In a large bowl, combine the shredded chicken, shredded cheese, and taco seasoning. Mix well until fully incorporated.
Heat the tortillas in a dry skillet over medium heat for 30 seconds on each side or until warm.
Place about 2 tablespoons of the chicken mixture onto the lower half of each tortilla. Roll tightly and secure with a toothpick if desired.
For frying, heat about 1 inch of oil in a skillet over medium heat until hot. Carefully place the rolled tacos seam-side down and fry for 3-4 minutes on each side.
If baking, preheat the oven to 425°F (220°C) and place the taquitos seam-side down on a baking sheet. Brush lightly with oil and bake for 15-20 minutes.
Once cooked, remove the taquitos from the oil or oven and let them drain on paper towels.
