- 1 cup all-purpose flour (or gluten-free flour for a gluten-free version)
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 cup unsweetened cocoa powder
- 1/2 cup unsalted butter, softened (or coconut oil for a vegan alternative)
- 1/2 cup brown sugar, packed
- 1/4 cup granulated sugar
- 1 large egg (or a flax egg for a vegan version)
- 1 teaspoon vanilla extract
- 1 cup chocolate chips (dark, milk, or dairy-free for vegan)
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large mixing bowl, combine the dry ingredients: rolled oats, flour, baking soda, salt, and cocoa powder. Whisk until well blended.
- In another bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Add the egg (or flax egg) and vanilla extract to the butter mixture and mix well.
- Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
- Fold in the chocolate chips until evenly distributed.
- Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, leaving about 2 inches of space between each cookie.
- Bake in the preheated oven for 10-12 minutes, or until the edges are set but the centers are still soft.
- Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
