4 whole wheat pita breads (or gluten-free if necessary)
1 cup cucumber, diced
1 cup cherry tomatoes, halved
1/2 red onion, thinly sliced
1/2 cup feta cheese, crumbled
1/2 cup tzatziki sauce (store-bought or homemade)
Instructions
Marinate the Chicken: In a bowl, whisk together the olive oil, red wine vinegar, minced garlic, oregano, salt, and black pepper. Add the chicken breasts, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes; for best results, marinate for 2-3 hours.
Prepare the Grill: Preheat your grill or grill pan over medium-high heat. Ensure it's well-oiled to prevent sticking.
Grill the Chicken: Remove the chicken from the marinade, discard remaining marinade. Grill chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
Chop the Chicken: Once cooked, let the chicken rest for 5 minutes, then chop into bite-sized pieces.
Assemble the Sandwich: Warm pita bread on the grill for 1-2 minutes. Stuff each pita with chopped chicken, cucumber, cherry tomatoes, red onion, feta cheese, and tzatziki sauce.
