A light, refreshing meal perfect for summer, packed with protein and vibrant Mediterranean flavors.
Ingredients
Scale:
- 8 oz. rotini or fusilli pasta
- 1 lb. cooked shrimp, peeled and deveined
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1 bell pepper, diced
- 1/2 red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 2 tbsp. fresh basil, chopped
- 1/3 cup extra virgin olive oil
- Juice of 1 lemon
- 1 tsp. Dijon mustard
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions until al dente, usually about 8-10 minutes. Drain and rinse under cold water.
- In a large mixing bowl, combine the cooled pasta, cooked shrimp, cherry tomatoes, cucumber, bell pepper, red onion, parsley, and basil.
- In a separate small bowl, whisk together the olive oil, lemon juice, Dijon mustard, salt, and pepper until well combined.
- Pour the dressing over the pasta and shrimp mixture. Toss gently to coat all ingredients evenly.
- Cover the salad and refrigerate for at least 30 minutes to allow flavors to meld.
- Before serving, give the salad a final toss and adjust seasoning if necessary. Serve chilled.
