Instructions

  1. In a mixing bowl, combine the flour, sugar, and salt. Whisk to blend the dry ingredients thoroughly.
  2. In a separate bowl, beat the eggs until frothy, then add the milk and melted butter. Mix well to incorporate all the wet ingredients.
  3. Gradually pour the wet mixture into the dry ingredients while whisking continuously to avoid lumps. Blend until smooth and let the batter rest for at least 30 minutes at room temperature.
  4. Heat a non-stick skillet over medium heat. Lightly grease the skillet with butter or oil. Pour about 1/4 cup of batter into the skillet, swirling it quickly to cover the bottom evenly.
  5. Cook for about 1-2 minutes, or until the edges begin to lift and the bottom is lightly golden brown. Carefully flip the crepe and cook for an additional 1 minute.
  6. Once cooked, place the crepe on a plate. Spoon a generous amount of the cottage cheese filling onto one half and fold the crepe over the filling.
  7. Continue this process until all the batter and filling are used, stacking the filled crepes on a warm plate to keep them warm.
