Ingredients
Scale:
1 lb ground beef, preferably 80/20
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) corn, drained
1 can (10 oz) diced tomatoes with green chilies
2 cups frozen tater tots
1 cup shredded cheddar cheese
1 packet taco seasoning (about 1 oz)
1 cup sour cream (for serving)
Chopped green onions (for garnish)
Additional shredded cheese (if desired)
Instructions
Preheat your oven to 375°F (190°C).
In a large skillet over medium heat, cook the ground beef until browned, about 5-7 minutes. Drain excess fat.
Stir in the taco seasoning and cook for an additional 2 minutes to allow the flavors to meld.
Add the black beans, corn, and diced tomatoes to the skillet. Stir well to combine.
Transfer the mixture to a greased 9x13 inch baking dish. Evenly spread the frozen tater tots on top.
Bake in the preheated oven for 25-30 minutes, until the tater tots are golden brown and crispy.
Remove from the oven and sprinkle cheddar cheese over the top. Return to oven for an additional 5-7 minutes until cheese is melted and bubbly.
Let sit for about 5 minutes, then top with sour cream and chopped green onions before serving.
