- 4 cod fillets (about 6 ounces each), skin removed
- 1 cup panko breadcrumbs
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- Lemon wedges (for garnish)
Instructions
- Preheat your oven to 425°F (220°C).
- Prepare a baking sheet by lining it with parchment paper.
- In a mixing bowl, combine panko breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, smoked paprika, salt, and pepper.
- Drizzle olive oil over the breadcrumb mixture and toss until evenly coated.
- Pat the cod fillets dry with paper towels and season with salt and pepper.
- Place the cod fillets on the prepared baking sheet and press the breadcrumb mixture onto each fillet.
- Bake in the preheated oven for 12-15 minutes, or until the cod is opaque and flakes easily.
- Remove from the oven, let cool for a couple of minutes, garnish with fresh parsley, and serve with lemon wedges.
