Crispy Baked Cod

  1. Preheat your oven to 425°F (220°C).
  2. Prepare a baking sheet by lining it with parchment paper.
  3. In a mixing bowl, combine panko breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, smoked paprika, salt, and pepper.
  4. Drizzle olive oil over the breadcrumb mixture and toss until evenly coated.
  5. Pat the cod fillets dry with paper towels and season with salt and pepper.
  6. Place the cod fillets on the prepared baking sheet and press the breadcrumb mixture onto each fillet.
  7. Bake in the preheated oven for 12-15 minutes, or until the cod is opaque and flakes easily.
  8. Remove from the oven, let cool for a couple of minutes, garnish with fresh parsley, and serve with lemon wedges.
