1 lb ground beef
1 onion, diced
2 cloves garlic, minced
1 packet taco seasoning
1 (15 oz) can black beans, drained and rinsed
1 (15 oz) can corn, drained
1 (10 oz) can diced tomatoes with green chilies
32 oz frozen tater tots
2 cups shredded cheese
1 cup sour cream
Chopped green onions
Chopped cilantro
Instructions
In a skillet over medium heat, brown the ground beef with the diced onion and minced garlic. Cook until the beef is no longer pink, about 5-7 minutes.
Add the taco seasoning to the beef mixture, stirring until fully incorporated. Follow the package directions; typically, you'll add a small amount of water and simmer until thickened.
In your slow cooker, layer the ground beef mixture on the bottom. Follow with the drained black beans, corn, and diced tomatoes.
Spread the frozen tater tots evenly over the top layer of the casserole.
Cover the slow cooker and cook on low for 4-6 hours, or on high for 2-3 hours.
During the last 30 minutes of cooking, sprinkle shredded cheese over the tater tots.
Once cooked, serve warm, topped with sour cream, green onions, and cilantro as desired.
