A refreshing summer salad that combines the crispness of cucumbers with the sweet juiciness of strawberries, creating a delightful contrast of flavors and textures.
Ingredients
Scale:
2 cups fresh strawberries, hulled and sliced
1 large cucumber, peeled and diced
1/2 cup crumbled feta cheese (optional)
1/4 cup red onion, thinly sliced
1/4 cup chopped fresh mint leaves
3 tablespoons olive oil
1 tablespoon balsamic vinegar
1 tablespoon honey or maple syrup
Salt and black pepper to taste
Instructions
In a large bowl, combine the sliced strawberries, diced cucumber, crumbled feta cheese (if using), red onion, and chopped mint leaves. Toss gently to mix the ingredients; take care not to crush the strawberries.
In a separate small bowl, whisk together the olive oil, balsamic vinegar, honey or maple syrup, and a pinch of salt and black pepper until well combined. This dressing should be emulsified and slightly thickened.
Drizzle the dressing over the salad mixture and toss gently to coat all the ingredients evenly. The goal is to ensure every piece is flavored without breaking them apart.
Let the salad sit for about 10 minutes before serving to allow the flavors to meld.
Serve chilled or at room temperature, enjoying the refreshing burst of flavors with every bite!
