1/2 cup powdered sugar, sifted
1 cup heavy whipping cream, chilled
1/2 cup semi-sweet chocolate chips, melted
1 teaspoon vanilla extract
16 large fresh strawberries
Chocolate shavings or sprinkles for topping
Fresh mint leaves (optional, for garnish)
Instructions
Wash the strawberries under cold water and pat them dry. Slice off the tops and hollow out the centers carefully.
Beat the softened cream cheese until smooth. Gradually add the powdered sugar and mix until well combined.
In a separate bowl, whip the heavy cream until stiff peaks form.
Gently fold the whipped cream into the cream cheese mixture until just combined.
Add the melted chocolate and vanilla extract, folding until smooth.
Transfer the cheesecake filling into a piping bag or resealable plastic bag.
Fill each hollowed strawberry with the chocolate cheesecake filling.
Place the filled strawberries on a serving platter, drizzle with remaining melted chocolate, and sprinkle with chocolate shavings.
Chill the strawberries in the refrigerator for at least 30 minutes before serving.
