Ingredients
Scale:
2 pounds of chuck roast, cut into 1-inch cubes
4 medium carrots, peeled and sliced
3 medium potatoes, peeled and cubed
1 large onion, chopped
2 cloves of garlic, minced
1 cup of green peas (fresh or frozen)
4 cups of beef broth
1 cup of red wine (optional)
2 teaspoons of dried thyme
2 bay leaves
Salt and pepper to taste
2 tablespoons of cornstarch mixed with 2 tablespoons of water (optional)
Instructions
Begin by preparing your ingredients: Chop the vegetables and cut the beef into cubes. Ensuring uniform sizes allows for even cooking.
In a large skillet over medium-high heat, sear the beef cubes for about 5-7 minutes until browned on all sides.
Transfer the seared beef to your crock pot. Add in the carrots, potatoes, onion, and garlic, mixing well to distribute the ingredients evenly.
Pour in the beef broth and wine, stirring to combine everything. Add thyme, bay leaves, salt, and pepper to taste.
Set your slow cooker on low and cook for 8 hours or high for 4 hours.
If you prefer a thicker stew, stir in the cornstarch mixture during the last 30 minutes of cooking.
