1 cup frozen peas and carrots (or mixed vegetables of your choice)
2 tablespoons olive oil
1 teaspoon dried thyme
1 teaspoon dried oregano
1/2 teaspoon turmeric (optional for color)

Instructions
Season the chicken breasts with salt, pepper, and paprika. Let them sit for about 10 minutes to absorb the flavors.
In a large pot, heat the olive oil over medium heat. Add the seasoned chicken and sear for 5-7 minutes on each side until golden brown. Remove the chicken from the pot and set aside.
In the same pot, add the diced onion and minced garlic. Sauté for 2-3 minutes until the onion is translucent and fragrant.
Stir in the rice, thyme, oregano, and turmeric. Cook for about 1-2 minutes, allowing the rice to become slightly toasted.
Pour in the chicken broth and bring the mixture to a boil. Scrape any brown bits from the bottom of the pot.
Return the browned chicken to the pot, reduce the heat to low, cover, and let it simmer for about 20-25 minutes until the rice is tender.
In the last 5 minutes of cooking, add the frozen peas and carrots. Stir gently, cover, and continue to cook until heated through.
Once cooked, remove the pot from the heat and let it sit, covered, for an additional 5 minutes. Fluff the rice with a fork, garnish with chopped parsley, and serve with lemon wedges if desired.
