Ingredients
Scale:
1 cup all-purpose flour (or gluten-free flour blend)
1/2 cup unsweetened cocoa powder
1 cup granulated sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup unsalted butter, melted
2 large eggs
1 teaspoon vanilla extract
1 cup shredded coconut (sweetened or unsweetened)
1/2 cup chocolate chips (semi-sweet or dark)
Instructions
Preheat your oven to 350°F (175°C). Grease a 9x9 inch baking pan or line it with parchment paper.
In a large bowl, whisk together all the dry ingredients: flour, cocoa powder, sugar, baking powder, and salt until well combined.
In another bowl, mix the wet ingredients: melted butter, eggs, and vanilla extract. Stir until smooth.
Pour the wet mixture into the dry ingredients, and mix gently until just combined.
Fold in the shredded coconut and chocolate chips gently into the batter.
Spread the brownie batter evenly into the prepared baking pan.
Bake in the preheated oven for 20-25 minutes or until a toothpick inserted into the center comes out with a few moist crumbs.
Once done, remove the brownies from the oven and let them cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
