4 large chicken thighs, bone-in, skin-on
2 medium onions, thinly sliced
3 tablespoons olive oil
3 cloves garlic, minced
1 cup low-sodium chicken broth
1 teaspoon dried or 1 tablespoon fresh thyme
1 teaspoon salt, or to taste
½ teaspoon freshly ground pepper
1 tablespoon balsamic vinegar
Instructions
Preheat your oven to 400°F (200°C).
Pat the chicken thighs dry with paper towels.
In a small bowl, mix salt, pepper, and thyme. Rub this mixture evenly over the chicken thighs.
In a large oven-safe skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions and cook until soft and golden brown, about 15 minutes.
Stir in the minced garlic and cook for an additional minute until fragrant.
Pour in the chicken broth and balsamic vinegar. Stir to combine, scraping up any brown bits from the bottom of the skillet.
Place the seasoned chicken thighs skin-side up on top of the onions in the skillet.
Transfer the skillet to the preheated oven and bake for 35-40 minutes, or until the chicken is golden brown and reaches an internal temperature of 165°F (75°C).
Remove from the oven, let the chicken rest for about 5 minutes, then serve warm with the caramelized onions spooned over the top.
