Grilled Halloumi and Vegetable Skewers are a delightful combination of flavors and textures that celebrate the essence of summer grilling. This dish features the unique, salty flavor of halloumi cheese, which becomes beautifully golden and soft when grilled to perfection. The charming contrast between the firm halloumi and the tender, charred vegetables creates a satisfying mouthfeel that is both rich and refreshing.
1 bell pepper (red, yellow, or green), cut into 1-inch pieces
1 small zucchini, sliced into 1/2-inch thick rounds
1 small red onion, cut into wedges
1 cup cherry tomatoes, rinsed and patted dry
2 tablespoons olive oil
1 teaspoon dried oregano
Salt and pepper to taste
Wooden or metal skewers
Instructions
Prepare the ingredients: Cut the halloumi cheese, bell pepper, zucchini, and red onion into pieces as specified above. Rinse the cherry tomatoes and set aside.
Marinate the vegetables: In a large bowl, combine the bell pepper, zucchini, red onion, and cherry tomatoes. Drizzle with olive oil, sprinkle with dried oregano, salt, and pepper. Toss until the vegetables are evenly coated and let them marinate for at least 15 minutes.
Assemble the skewers: Thread the ingredients onto the soaked skewers, alternating between halloumi and the marinated vegetables.
Preheat the grill: Heat the grill to medium-high heat (about 400°F/200°C). Clean the grill grates.
Grill the skewers: Place the skewers on the grill and cook for about 8-10 minutes, turning occasionally until the halloumi is golden brown and the vegetables are tender.
Serve: Remove the skewers from the grill and let them cool for a minute. Serve warm, possibly with a squeeze of lemon juice over the top.
