Ingredients
Scale:
4 medium zucchinis, sliced into 1/4-inch thick rounds
2 tablespoons olive oil
Salt and pepper, to taste
1 cup cherry tomatoes, halved
1/2 red onion, thinly sliced
1/2 cup feta cheese, crumbled (optional for a vegan version)
1/4 cup fresh basil leaves, torn
1/4 cup parsley, chopped
1/4 cup olive oil
2 tablespoons red wine vinegar
1 clove garlic, minced
1 teaspoon Dijon mustard
Instructions
Preheat your grill to medium-high heat (around 400°F). Make sure the grill grates are clean to ensure even cooking.
In a large bowl, toss the zucchini rounds with olive oil, salt, and pepper until evenly coated.
Place the zucchini on the grill grates. Grill for about 3-4 minutes per side or until they are tender and have nice grill marks. Remove from the grill and let cool slightly.
In a small bowl, whisk together olive oil, red wine vinegar, minced garlic, Dijon mustard, salt, and pepper until emulsified.
In a large bowl, combine the grilled zucchini, cherry tomatoes, red onion, feta cheese (if using), basil, and parsley. Toss gently.
Drizzle the dressing over the salad and toss gently to combine all ingredients. Adjust seasoning with salt and pepper if needed.
Serve the salad immediately or refrigerate for 30 minutes to let the flavors meld.
