This Hawaiian Chicken Recipe is a vibrant and mouthwatering option that combines juicy grilled chicken with the sweetness of pineapple.
Ingredients
Scale:
For the Marinade:
1 cup soy sauce
1/2 cup brown sugar
1/4 cup rice vinegar
2 cloves garlic, minced
1 tablespoon fresh ginger, grated
1 tablespoon sesame oil
Pinch of black pepper
For the Chicken:
4 boneless, skinless chicken breasts
1/2 cup fresh pineapple chunks (plus extra for garnish)
2 green onions, sliced (for garnish)
Instructions
Make the Marinade: In a medium bowl, whisk together soy sauce, brown sugar, rice vinegar, minced garlic, grated ginger, sesame oil, and black pepper until the sugar is dissolved.
Marinate the Chicken: Place the chicken breasts in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring each piece is well-coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight.
Prepare the Grill: Preheat your grill to medium-high heat (about 375°F to 400°F). Ensure the grates are clean and lightly oiled.
Grill the Chicken: Remove the chicken from the marinade and discard the leftover marinade. Grill the chicken for 6-7 minutes on each side or until the internal temperature reaches 165°F.
Add Pineapple: In the last 2 minutes of grilling, add fresh pineapple chunks to the grill, cooking them until they are golden brown.
Serve: Remove the chicken and pineapple from the grill. Let the chicken rest for 5 minutes before slicing. Serve garnished with grilled pineapple and sliced green onions.
