Ingredients

- 6 large eggs
- 1/2 cup milk (or dairy-free alternative)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup cooked and crumbled turkey sausage (or bacon)
- 1/2 cup shredded cheese (cheddar, mozzarella, or your choice)
- 1/4 cup finely chopped spinach
- 1/4 cup diced bell peppers
- 1/4 cup chopped onions (optional)
- Fresh herbs (like chives or parsley) for topping
- Avocado slices for topping
- Hot sauce or salsa for topping
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, crack the eggs and whisk them together with the milk, salt, and black pepper until fully combined.
- Add in your protein additions (sausage, cheese) and vegetable additions (spinach, peppers, onions) to the egg mixture. Stir well.
- Grease a silicone egg bite mold or a muffin tin with cooking spray.
- Pour the egg mixture evenly into the prepared mold or tin, filling each cup about 3/4 full.
- Bake in the preheated oven for 20-25 minutes, or until the egg bites are set and slightly golden on top.
- Once done, remove from the oven and let cool for a few minutes before gently removing the egg bites from the mold.
- Serve warm, garnished with your choice of toppings.
