High-Protein Egg Bites

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, crack the eggs and whisk them together with the milk, salt, and black pepper until fully combined.
  3. Add in your protein additions (sausage, cheese) and vegetable additions (spinach, peppers, onions) to the egg mixture. Stir well.
  4. Grease a silicone egg bite mold or a muffin tin with cooking spray.
  5. Pour the egg mixture evenly into the prepared mold or tin, filling each cup about 3/4 full.
  6. Bake in the preheated oven for 20-25 minutes, or until the egg bites are set and slightly golden on top.
  7. Once done, remove from the oven and let cool for a few minutes before gently removing the egg bites from the mold.
  8. Serve warm, garnished with your choice of toppings.
