  1. Preheat your oven to 225°F (110°C).
  2. In a clean bowl, whip the egg whites on medium speed until soft peaks form. Gradually add the granulated sugar, one tablespoon at a time, and continue to whip until stiff peaks form and the mixture is glossy.
  3. Gently fold in the vanilla extract and cornstarch until just combined.
  4. Line a baking sheet with parchment paper. Spoon the meringue mixture onto the parchment to create rounds. Bake for about 1.5 hours, or until the meringue is dry.
  5. In a chilled bowl, whip the heavy cream on medium-high speed until it begins to thicken. Add the powdered sugar and vanilla extract, and continue to whip until soft peaks form.
