LBJ’s Famous Chili Recipe offers a hearty and flavorful dish that embodies the spirit of Texan comfort food. This beloved recipe was famously enjoyed by President Lyndon B. Johnson, known for his love of robust, spicy meals.
Ingredients
Scale:
2 pounds ground beef (preferably chuck for richness and flavor)
1 large onion, diced
2 cloves garlic, minced
1 bell pepper, diced (any color, such as green, red, or yellow for sweetness)
1 can (14.5 ounces) diced tomatoes, preferably fire-roasted for added smokiness
2 cans (15 ounces each) kidney beans, drained and rinsed
1 can (15 ounces) black beans, drained and rinsed
2 tablespoons chili powder (adjust based on your heat preference)
1 tablespoon cumin for a warm, earthy flavor
1 teaspoon smoked paprika to add depth
1 teaspoon oregano for a herbal note
Salt and pepper to taste
1 tablespoon olive oil (for sautéing)
1 cup beef broth (homemade or store-bought)
1 cup water (or more as needed for desired consistency)
Chopped green onions for a fresh crunch
Shredded cheese (cheddar or Monterey Jack, to melt beautifully on top)
Fresh cilantro (optional, for a burst of freshness)
Sour cream (optional, for creaminess and to cool the spice)
Instructions
In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and bell pepper, cooking until softened, about 5-7 minutes. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
Increase the heat to medium-high and add the ground beef to the pot. Cook until browned, approximately 8-10 minutes, breaking it apart with a wooden spoon. Drain any excess fat.
Once the beef is browned, stir in the chili powder, cumin, smoked paprika, oregano, salt, and pepper. Cook for 2-3 minutes to toast the spices.
Add the diced tomatoes (with juices), kidney beans, and black beans to the pot. Stir well to combine all ingredients thoroughly.
Pour in the beef broth and water, stirring to combine. Bring the mixture to a boil.
Reduce the heat to low, cover the pot, and let the chili simmer for at least 30 minutes, stirring occasionally.
Taste the chili and adjust seasonings as needed, adding more salt, pepper, or chili powder to suit your preferences.
Once the chili is done simmering, ladle it into bowls and garnish with chopped green onions, shredded cheese, and a dollop of sour cream if desired.
