A delightful combination of sweet and savory in the form of Melon Prosciutto Skewers. This easy summer skewer recipe features juicy cantaloupe wrapped in thin slices of prosciutto.
Ingredients

1 medium ripe cantaloupe, peeled and cubed
1 cup of fresh basil leaves (optional)
8 ounces of prosciutto, thinly sliced
12-15 wooden or metal skewers (6 inches long)
Balsamic glaze or reduction (optional)
Instructions
Start by preparing the cantaloupe. Cut it in half, scoop out the seeds, and peel the skin off. Cut the flesh into bite-sized cubes (about 1-2 inches).
Next, take a slice of prosciutto and cut it into strips, roughly 3-4 inches wide.
To assemble the skewers, take a wooden or metal skewer and thread one cube of cantaloupe onto the skewer.
Wrap a strip of prosciutto around the cantaloupe cube, securing it on the skewer. You can alternate with fresh basil leaves.
Repeat the process until all the cantaloupe cubes are used, filling each skewer with one or two pieces of cantaloupe and prosciutto.
If desired, drizzle balsamic glaze over the assembled skewers.
Chill the skewers in the refrigerator for about 30 minutes before serving.
