A delightful treat that perfectly combines the sweet flavors of ripe bananas and rich chocolate, encapsulating everything you love about classic banana muffins.
Ingredients
Scale:
1 ½ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon ground cinnamon (optional)
3 medium ripe bananas, mashed (about 1 ½ cups)
⅓ cup melted butter
½ cup granulated sugar
1 large egg, beaten
1 teaspoon vanilla extract
¾ cup semi-sweet chocolate chips
Instructions
Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it with cooking spray.
In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon (if using).
In a large bowl, combine the mashed bananas with melted butter, stirring until well blended.
Add the sugar, beaten egg, and vanilla extract to the banana mixture, and mix until fully incorporated.
Gradually add the dry ingredients to the wet ingredients, folding gently with a spatula until just combined.
Fold in the chocolate chips, ensuring an even distribution throughout the batter.
Divide the batter evenly among the muffin cups, filling each about ¾ full.
Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
