1/2 cup vegetable broth (or water, preferably low-sodium for better flavor control)
2 tablespoons soy sauce or tamari (for gluten-free; tamari is a great alternative)
1 tablespoon olive oil (extra virgin for enhanced flavor)

Instructions
In a large bowl, combine the vital wheat gluten, chickpea flour, nutritional yeast, smoked paprika, garlic powder, onion powder, black pepper, and red pepper flakes. Stir until evenly mixed.
In a separate bowl, whisk together the vegetable broth, soy sauce, and olive oil. Slowly pour the wet mixture into the dry ingredients, stirring constantly until a dough begins to form.
Transfer the dough to a clean surface and knead for about 3 minutes until it becomes elastic and firm.
Roll the dough into a log shape, about 6 inches long. Wrap it tightly in aluminum foil, twisting the ends to seal well.
Place the wrapped log in a steamer basket over boiling water. Cover and steam for 30 minutes.
Once steamed, let the salami cool completely before unwrapping. After cooling, slice it thinly.
