1/2 cup unsweetened cocoa powder
1/4 cup ground flaxseed (optional)
1 cup natural peanut butter or almond butter
1/2 cup honey or maple syrup
1 teaspoon vanilla extract
1/2 cup dark chocolate chips or diced dried fruit (optional)
1/4 cup chopped nuts (optional)
Instructions
In a large mixing bowl, combine the rolled oats, cocoa powder, and ground flaxseed. Stir well until evenly mixed.
In a separate bowl, mix together the peanut butter, honey (or maple syrup), and vanilla extract until smooth and creamy.
Pour the wet mixture over the dry ingredients and mix thoroughly with a spatula or wooden spoon.
If desired, fold in the chocolate chips or other toppings, ensuring they are evenly distributed.
Line an 8x8-inch baking dish with parchment paper. Transfer the mixture into the dish, pressing it down firmly to create an even layer.
Refrigerate for at least 1 hour, or until the bars are set.
