2 cups all-purpose flour
1/2 cup boiling water
1/4 teaspoon salt
1 tablespoon vegetable oil
1 cup finely chopped vegetables (carrots, cabbage, spinach)
1 cup ground meat (chicken, pork, or beef)
2 tablespoons soy sauce
1 teaspoon minced garlic
1 teaspoon minced ginger
2 green onions, chopped
Salt and pepper to taste
Soy sauce for dipping

Instructions
In a large bowl, mix the flour and salt until evenly combined. Gradually add boiling water while stirring with a fork. Once the dough begins to come together, add vegetable oil and knead the dough on a floured surface for about 5-7 minutes until it is smooth and elastic. Cover with a damp cloth and let it rest for at least 30 minutes.
In a mixing bowl, combine your choice of filling ingredients (vegetables, ground meat, soy sauce, garlic, ginger, green onions, salt, and pepper). Mix until well-blended and set aside.
After the dough has rested, divide it into small balls (about the size of golf balls). Roll each ball into a flat circle (about 5 inches in diameter). Place a generous spoonful of filling in the center of each circle.
Fold the dough over the filling to create a half-moon shape. Press the edges together firmly to seal.
Fill a large steamer pot with water, bringing it to a gentle boil. Place the dumplings in the steamer basket lined with parchment paper and steam for about 15-20 minutes or until cooked through.
