  1. In a large bowl, combine the dry ingredients: flour, baking powder, cinnamon, salt, and sugar. Whisk until well-mixed, ensuring there are no lumps.
  2. In another bowl, whisk together the eggs, vanilla extract, and milk until well-blended. Gradually add the wet mixture to the dry ingredients, stirring until just combined.
  3. In a separate bowl, toss the diced apples with lemon juice, sugar, and cinnamon. Fold the apple mixture into the batter gently until evenly distributed.
  4. Heat vegetable oil in a deep pot or fryer to 350°F (175°C). Use a thermometer to maintain the temperature.
  5. Using a spoon or ice cream scoop, carefully drop a few spoonfuls of the batter into the hot oil. Fry for 3–4 minutes or until golden brown, flipping halfway through.
