Papas con Chorizo, or Potatoes and Chorizo, is a beloved dish in Mexican cuisine that marries the comforting heartiness of potatoes with the rich, spicy flavor of chorizo sausage. 2 large potatoes, peeled and diced into ½-inch cubes
8 ounces of chorizo sausage, casings removed
1 small onion, chopped finely
2 cloves of garlic, minced
1 tablespoon of vegetable oil
Salt and pepper, to taste
Chopped cilantro, for garnishing
Chopped green onions, for garnishing
Fresh lime wedges, for garnishing
Shredded cheese (optional), such as queso fresco or cheddar
Instructions
Heat the vegetable oil in a large skillet over medium heat, ensuring the oil is hot before adding the potatoes.
Add the diced potatoes and season with salt and pepper. Cook for about 10-15 minutes, stirring occasionally, until the potatoes are golden brown and tender.
While the potatoes are cooking, in a separate pan, cook the chorizo over medium heat for about 5-7 minutes, breaking it apart until it’s fully cooked and browned.
Add the chopped onion and minced garlic to the skillet with the potatoes, cooking for an additional 3-4 minutes until the onion is translucent.
Stir in the cooked chorizo and mix thoroughly with the potato mixture. Cook together for another 2-3 minutes.
Taste and adjust seasoning with more salt and pepper if needed. Remove from heat.
Serve hot, garnished with chopped cilantro, green onions, and a squeeze of fresh lime juice.
