  2. Once boiling, remove the saucepan from heat, cover it, and let the eggs sit for 12-14 minutes.
  3. After the time has elapsed, transfer the eggs to a bowl of ice water and let them cool for at least 5 minutes.
  4. Once cooled, gently tap each egg on a hard surface and peel. Rinse under cold water to remove any shell bits, then pat dry with a paper towel.
  5. Carefully slice each egg in half lengthwise and scoop out the yolks into a mixing bowl.
