A cozy dish that marries hearty sausage with the sweetness of roasted sweet potatoes, drizzled in a delightful honey garlic sauce.

1 lb. Italian sausage (sweet or spicy)
2 large sweet potatoes, peeled and diced into 1-inch cubes
1 red bell pepper, diced
1 yellow onion, diced
2 tablespoons olive oil
Salt and pepper to taste
1/4 cup honey
3 cloves garlic, minced
2 tablespoons soy sauce
1 tablespoon apple cider vinegar
Instructions
Preheat your oven to 425°F (220°C).
In a large bowl, combine the diced sweet potatoes, red bell pepper, and onion. Drizzle with olive oil, and season with salt and pepper. Toss until well coated.
Spread the sweet potato mixture evenly on a large baking sheet. Roast in the preheated oven for 20 minutes.
While the sweet potatoes are roasting, heat a large skillet over medium heat. Add the Italian sausage, breaking it apart. Cook until browned, about 8-10 minutes.
In a small saucepan, combine honey, minced garlic, soy sauce, and apple cider vinegar. Bring to a simmer over medium heat, stirring frequently. Cook for 3-4 minutes until slightly thickened.
Once the sweet potatoes are done roasting, add them to the skillet with the sausage. Pour the honey garlic sauce over and stir to combine thoroughly.
Cook everything together for an additional 2-3 minutes, allowing the flavors to meld.
Remove from heat and serve warm, garnished with fresh herbs if desired.
