4 salmon fillets (about 6 oz each, skin-on preferred)
1 tablespoon olive oil
Salt and black pepper to taste
2 ripe peaches, pitted and diced
1/4 cup bourbon whiskey
1/4 cup honey or maple syrup
2 tablespoons Dijon mustard
1 tablespoon soy sauce
1 tablespoon apple cider vinegar
Fresh thyme or parsley, chopped for garnishing
Instructions
Preheat your oven to 400°F (200°C).
In a medium saucepan, combine the diced peaches, bourbon, honey (or maple syrup), Dijon mustard, soy sauce, and apple cider vinegar. Bring the mixture to a simmer over medium heat.
Allow the glaze to simmer for about 10-12 minutes or until it thickens slightly.
While the glaze is simmering, prepare the salmon fillets. Pat them dry and place them skin-side down on a baking sheet lined with parchment paper.
Drizzle olive oil over the salmon fillets and season generously with salt and black pepper.
Once the glaze has thickened, brush a generous amount over the top of each salmon fillet.
Place the baking sheet in the preheated oven and roast the salmon for 12-15 minutes.
During the last 2 minutes of roasting, switch the oven to broil to caramelize the glaze slightly.
Remove the salmon from the oven and let it rest for a couple of minutes. Drizzle any remaining glaze over the top and garnish with fresh thyme or parsley before serving.
