2 cans (15 oz each) white beans, drained and rinsed
1/4 cup buffalo sauce (adjust to taste)
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
Salt and pepper to taste
8 small corn or flour tortillas
1 cup shredded lettuce
1/2 cup diced tomatoes
1/4 cup chopped red onion
1/4 cup cilantro, chopped
1/2 avocado, sliced (optional)

While the filling is cooking, warm the tortillas in a dry skillet or wrap them in foil and warm them in the oven.
To assemble the tacos, place a generous spoonful of the buffalo white bean filling onto each tortilla.
Top with shredded lettuce, diced tomatoes, chopped red onion, cilantro, and avocado slices if using. Drizzle with vegan sour cream or plain yogurt.
