Ingredients
Scale:
1 ½ cups graham cracker crumbs
½ cup unsalted butter, melted
¼ cup granulated sugar
½ cup unsalted butter
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/3 cup unsweetened cocoa powder
½ cup all-purpose flour
¼ teaspoon salt
¼ teaspoon baking powder
1 cup semi-sweet chocolate chips
1 cup marshmallow fluff
½ cup mini marshmallows (optional, for added texture)
Instructions
Preheat your oven to 350°F (175°C). In a medium bowl, mix the graham cracker crumbs, melted butter, and sugar until well combined. Press the mixture firmly into the bottom of a greased 9x9-inch baking pan. Bake for 10 minutes, until lightly golden. Remove from oven and set aside to cool slightly.
In a saucepan over low heat, melt the butter. Once melted, remove from heat and stir in sugar, eggs, and vanilla extract until well combined. In another bowl, whisk together cocoa powder, flour, salt, and baking powder. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the chocolate chips.
Pour the brownie batter over the cooled graham cracker crust, spreading it evenly. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs attached.
Once the brownies are done baking, spread the marshmallow fluff evenly on top. Optionally, sprinkle mini marshmallows over the fluff. Return to the oven for an additional 5-7 minutes, until the marshmallow topping is lightly toasted.
Allow the brownies to cool in the pan for at least 30 minutes before cutting into squares.
