2 cups cooked chicken, shredded
1 cup celery, finely chopped
1 cup red grapes, halved
1/2 cup pecans, chopped (optional)
1/4 cup green onions, sliced
1 cup mayonnaise
1 tablespoon Dijon mustard
1 tablespoon apple cider vinegar
1 tablespoon honey or sugar (to taste)
Salt and pepper, to taste
1/4 teaspoon garlic powder (optional)
1/4 teaspoon paprika
Instructions
If using raw chicken, poach it in boiling water for about 15-20 minutes or until fully cooked. Let it cool, then shred it with two forks.
In a large bowl, combine the mayonnaise, Dijon mustard, apple cider vinegar, honey, garlic powder, paprika, salt, and pepper. Whisk until smooth.
Add the shredded chicken, chopped celery, halved grapes, chopped pecans, and sliced green onions to the dressing. Gently fold everything together until evenly coated.
Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld.
