A vibrant fusion of sweet and spicy flavors that will have everyone asking for seconds. The magic lies in the luscious honey-lime marinade, which not only infuses the chicken with a savory-sweet zest but also provides an irresistible sticky glaze when grilled to perfection.
Ingredients
Scale:
½ cup honey
¼ cup fresh lime juice (about 2-3 limes)
2 tablespoons soy sauce
1 tablespoon olive oil
2 teaspoons garlic, minced
1 teaspoon ground ginger
½ teaspoon red pepper flakes (adjust for spice level)
2 pounds chicken thighs or breasts (bone-in or boneless)
Salt and pepper, to taste
Chopped cilantro (optional)
Additional lime wedges (optional)
Optional sesame seeds for a crunchy finish
Thinly sliced green onions for garnish (optional)
Instructions
In a medium bowl, whisk together honey, lime juice, soy sauce, olive oil, minced garlic, ground ginger, and red pepper flakes. Ensure that the honey is fully dissolved to avoid clumps, creating a smooth mixture that envelops the chicken beautifully.
Place the chicken in a large resealable plastic bag or a glass dish. Pour the marinade over the chicken, ensuring all pieces are well coated. Massage the marinade into the chicken for at least 30 seconds to maximize flavor absorption. Seal the bag or cover the dish and refrigerate for at least 1 hour, or preferably overnight for deeper flavor.
When ready to cook, preheat your grill to medium-high heat (about 375°F to 400°F). If using a grill pan, heat it over medium heat on your stovetop.
Remove the chicken from the marinade, allowing excess marinade to drip off. Season both sides with salt and pepper. Place the chicken on the hot grill. Cook for about 6-7 minutes per side, or until the chicken reaches an internal temperature of 165°F.
In the last few minutes of grilling, brush the chicken with any remaining marinade to create a sticky honey glaze. Discard any leftover marinade that has come into contact with raw chicken.
Once cooked, remove the chicken from the grill and let it rest for 5-10 minutes. Serve the chicken warm, garnished with chopped cilantro and lime wedges.
