  1. In a medium saucepan, combine the chopped dates and water. Bring to a simmer over medium heat and cook for about 10 minutes, or until the dates have softened significantly.
  2. Remove the saucepan from heat. Use an immersion blender or transfer the mixture to a blender. Blend until smooth and creamy.
  3. Return the blended date mixture to the saucepan. Stir in the brown sugar, vanilla extract, and salt. Cook over low heat for another 5-7 minutes, stirring frequently, until the sugar is completely dissolved and the syrup has thickened slightly.
  4. Remove from heat and allow the syrup to cool completely. Transfer to a glass jar or airtight container. Once cooled, the syrup can be stored in the refrigerator for up to two weeks.
