Ingredients
Scale:
1 pound ground beef
1 cup cooked rice (white or brown)
1 medium onion, diced
1 can (15 oz) diced tomatoes, undrained
4 large bell peppers (red, yellow, or green), chopped
2 cloves garlic, minced
2 teaspoons Italian seasoning
1 teaspoon salt
1/2 teaspoon black pepper
1 cup shredded cheese (cheddar or mozzarella)
1/2 cup bread crumbs
1 tablespoon olive oil
Additional cheese for sprinkling (optional)
Instructions
Preheat your oven to 375°F (190°C).
In a large skillet over medium heat, add the ground beef and onion. Cook until the beef is browned and the onion is translucent, about 5-7 minutes.
Add minced garlic and cook for another minute, stirring frequently until fragrant.
Stir in the diced tomatoes, chopped bell peppers, cooked rice, Italian seasoning, salt, and black pepper. Mix well to combine all the ingredients.
Transfer the mixture into a greased 9x13 inch baking dish, spreading it evenly.
Sprinkle shredded cheese on top of the casserole mixture.
In a small bowl, combine bread crumbs with olive oil, then sprinkle evenly over the cheese layer.
Cover the baking dish with aluminum foil and bake for 25 minutes.
After 25 minutes, remove the foil and continue to bake for an additional 10-15 minutes, or until the casserole is bubbly and the top is golden brown.
