When it comes to easy, no-fuss snacks, few can rival the delightfulness of no bake peanut butter balls. These little energy bites are not only incredibly simple to make, but they also pack a nutritional punch, making them a perfect choice for a quick snack or a healthy dessert.
Ingredients
Scale:
1 cup rolled oats
1/2 cup ground flaxseed (or chia seeds for a different texture)
1/2 cup shredded coconut (unsweetened)
1 cup creamy or crunchy peanut butter (natural is best)
1/3 cup honey or maple syrup (for a vegan option, maple syrup is a great substitute)
1/2 cup mini chocolate chips or cocoa powder (optional)
Chopped nuts for rolling (like almonds or walnuts) (optional)
Instructions
In a large mixing bowl, combine the rolled oats, ground flaxseed, and shredded coconut. Stir until well mixed.
Add the peanut butter and honey (or maple syrup) to the dry ingredients. Mix well until everything is evenly coated.
If you're adding chocolate chips, fold them in at this stage. You can also add any other mix-ins like nuts or dried fruit.
Once the mixture is fully combined, use your hands to roll the mixture into small balls, about 1 inch in diameter. Place the balls on a parchment-lined baking sheet.
Roll the balls in chopped nuts or cocoa powder for a delightful coating.
Refrigerate the peanut butter balls for at least 30 minutes to firm up.
Enjoy directly from the fridge or pack them up for a quick snack on the go.
