4 medium ripe tomatoes, diced
2 large cucumbers, peeled and diced
1 small red onion, finely chopped
1/4 cup fresh parsley, chopped
1/4 cup fresh basil, chopped
1/4 cup extra virgin olive oil
2 tablespoons red wine vinegar
1 teaspoon Dijon mustard
Salt and pepper to taste
1/2 cup crumbled feta cheese (optional)
Slices of avocado (optional)
Instructions
Wash and prepare all vegetables. Start by rinsing the tomatoes under cold water and patting them dry. Dice the tomatoes, peel and slice the cucumbers, and finely chop the red onion. Place these in a large mixing bowl, ensuring even distribution for a balanced flavor in every bite.
Add the chopped parsley and basil to the bowl, mixing them gently with the vegetables to release the herbs' aromatic oils.
In a separate small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and pepper until the dressing is well combined.
Pour the dressing over the salad mixture and toss to coat all ingredients evenly.
