Instructions

  1. Preheat your oven to 350°F (175°C). In a medium bowl, combine the chocolate graham cracker crumbs, melted butter, and granulated sugar. Mix well until the crumbs are evenly coated. Press the mixture into the bottom of a 9-inch springform pan to form an even layer. Bake for 10 minutes, then remove from the oven and let it cool.
  2. In a large mixing bowl, beat the softened cream cheese and granulated sugar together until smooth and creamy. Add the vanilla extract, mixing until combined. Gradually add the eggs, one at a time, mixing well after each addition.
  3. Divide the filling into three bowls. In the first bowl, stir in the melted dark chocolate until fully combined. In the second bowl, mix in the melted milk chocolate. In the third bowl, whisk in the cocoa powder.
  4. Start by pouring the dark chocolate filling into the cooled crust. Next, add the milk chocolate layer, and finish with the cocoa layer on top. Tap the pan gently to release any air bubbles.
  5. Place the springform pan in the oven and bake for 55-60 minutes. The center should be slightly jiggly but firm around the edges. Turn off the oven, crack the door open, and let the cheesecake cool in the oven for another hour.
  6. Once cooled, refrigerate for at least 4 hours, preferably overnight.
  7. In a clean bowl, whip the heavy cream until soft peaks form. Once the cheesecake has set, spread the whipped cream over the top. Drizzle with melted white chocolate and garnish with chocolate shavings.
  8. Carefully remove the sides of the springform pan. Slice into wedges and serve chilled.
