  1. In a large mixing bowl, combine the flour and salt. Make a well in the center, add the eggs and olive oil, and gradually mix until a dough forms.
  2. Transfer the dough to a floured surface and knead it for about 10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for 30 minutes.
  3. Divide the rested dough into four pieces. Roll each piece thinly using a pasta machine or rolling pin, dusting with flour as needed.
  4. Cut the rolled-out dough into your desired pasta shape (fettuccine, tagliatelle, etc.). Dust with flour to keep the pieces separate.
  5. In a saucepan over medium heat, melt the butter. Add the minced garlic and sauté for about 1 minute until fragrant.
  6. Pour in the heavy cream and bring to a gentle simmer. Reduce the heat and stir in the Parmesan cheese until melted and creamy. Add the truffle oil, and season with salt and pepper.
  7. In a large pot of salted boiling water, cook your pasta for 2-4 minutes, or until al dente. Reserve a cup of pasta water, then drain the pasta.
  8. Add the hot pasta to the creamy sauce, and toss gently. If needed, add reserved pasta water to achieve desired creaminess.
  9. Plate the truffle pasta and garnish with chopped chives or parsley, and shaved truffles if available.
