Ingredients

3 medium beets, peeled and grated
1 large onion, chopped
1 large carrot, grated
1 medium potato, diced
1/2 head of cabbage, shredded
2 cloves garlic, minced
1 red bell pepper, chopped
6 cups vegetable or beef broth
1 tablespoon tomato paste
2 tablespoons apple cider vinegar
2 bay leaves
1 teaspoon dried dill
Salt and pepper to taste
1 pound of beef or pork, cut into bite-sized pieces (optional)
Sour cream (for serving)
Fresh dill, chopped (for serving)
Crusty bread (for serving)
Instructions
In a large pot, heat a splash of oil over medium heat. Add the chopped onions and sauté for 5-7 minutes until they are translucent.
Add the grated carrots and bell pepper, cooking for another 3-4 minutes until softened.
If using meat, add the beef or pork at this stage, browning it on all sides (about 5-8 minutes).
Stir in the grated beets and cook for an additional 5 minutes.
Add the diced potatoes, shredded cabbage, and minced garlic. Stir well to combine all ingredients.
